Ingredients:

(For the Chicken)

1 can of your favorite salsa (homemade would be even better!)

4 pieces of chicken breast or thighs

2 tablespoons extra virgin olive oil

(For the Quesadillas)

1 avocado

Greek yogurt

Shredded sharp cheddar cheese

2 whole wheat tortillas

1 can black beans

Recipe:

Begin with olive oil in a pot over medium high heat. Add chicken and sear on both sides for about 5 minutes. Add in salsa, cover and lower heat to medium. Simmer for 25-30 minutes or until chicken is cooked through. Uncover and shred chicken.

Toast two tortillas over an open flame or in the oven. Sprinkle one liberally with cheese, beans, and shredded chicken. Top with the other tortilla. Enjoy with avocado on top (or inside, if you’re into warm avocado) and a spoon of greek yogurt!
