I have no clue why I was so compelled to call this a chopped salad but it felt right so I’m going with it. You could throw any protein, fresh fruits or veggies you have into this salad or even leave out the eggs and replace the chicken with black beans to make it vegan. Have fun with this variation on a chopped salad with a random but always delicious honey mustard dressing.
4 eggs (hard boiled)
2 cups cherry tomatoes
2 cups baby sweet peppers
2 cups croutons (to make at home simply toast cubes of any bread you have on hand)
1 head romain lettuce
2 grilled chicken breasts seasoned with salt and pepper
Honey Mustard Dressing Ingredients:
2 tsp dijon mustard
2 tsp honey
1 tsp balsamic vinegar
3 tbsp olive oil
salt and pepper
In a large bowl combine chopped veggies, eggs, chicken, and croutons.
In a small combine dressing ingredients and mix well.
Pour over salad and toss.
