4-5 leaves of kale

1 egg

2 tablespoons olive oil

3 tablespoons white vinegar

Salt and pepper to taste

2 cups water



In a small frying pan, sauté kale in olive oil. Salt and pepper to taste and remove from heat.

In a high walled frying pan bring water and vinegar to a simmer. Crack egg into a small bowl or ramekin and slowly lower into simmering water. Wait until all of the whites are solid and remove from water onto a paper towel. Dry gently and plate with kale. Enjoy!
